Maybe they are a takeoff of something else in Ireland? They are very popular in the eastern United States at St. Patricks - I have made and sold numerous dozens. As with any people who emigrate some foods change due to local ingredients and some due to generational changes. Is there anything in Irish culinary history that would possibly be the 'ancestral beginning' for the Irish Potato sweet? I would love to hear anyone's ideas or information aiding me in my research. The filling is good so dont need recipes, i just need to know how to fold the pesky things.
I have searched the web for diagrams and couldnt find one, and i even own 2 indian cookery books that don't have folding tips!

If anyone knows a website i can take a peek at, that would be lovely, cheers, thanks, ta.

Don't get me wrong, I love Thai food. Its just that there are either cashews or some form of nut sauce used in most dishes. Yesterday while at lunch I was asked if the Thai people were big peanut farmers, which I do not know. Could this be a reason. I know most people are afraid when you say Thai because they are expecting to have their faces melted off by spice, but I honestly don't think its too bad.
Long live Thai Kitchen in Bridgewater, NJ. and Chao Phaya in Somerset, NJ. Both have amazing food.

Now then, deep-fried shredded chicken in black bean sauce is my favourite food but I have noticed from years of ordering it in various different Chinese restaurants that Chinese opinion is very divided as to whether this dish should exist or not.

Sometimes when I order it in a restaurant, the dish is on the menu and no-one bats an eyelid about me ordering it. However, in other restaurants, when I order it, the waiter is surprised and almost incredulous that I had ordered such a thing. It is as if they cannot conceive of the shredded chicken being put together with that sauce, although they have it with plenty of other sauces on the menu, and they have the black bean sauce in plenty of other dishes. I often have to repeat the order because they think they have not heard me correctly!

My question is, therefore, does anyone know why this might be the case? Is there a traditional divide that might make Chinese restaurant averse to serving it? Is it a speciality of one province?
