The filling is good so dont need recipes, i just need to know how to fold the pesky things.
I have searched the web for diagrams and couldnt find one, and i even own 2 indian cookery books that don't have folding tips!

If anyone knows a website i can take a peek at, that would be lovely, cheers, thanks, ta.

Take one sheet of filo pastry and fold it in half length ways.
Place 2-3 heaped teaspoons of the lamb and veg mixture at one end, then fold over one corner to make a triangle. Continue folding this way to make a triangular package sealing the edges with water.


Its like folding a flag

If you are talking about the triangular samosa,that is really tricky,i know many who have not worked it out,let alone mastered it.In the absence of this, folding a a square in half to get a rectangle,or joining opposite corners to get a triangle,or a circle of pastry folded over to make a semicircle is easy & quite presentable,

Roll dough out to form a 6 to 8" dough cookie no thicker than the thickness of a dime (10 ¢ coin). The diameter of the dough cookie determines the size of Samosa. 8" will make a large Samosa.

2. . With a sharp knife cut the dough cookie into half. We will use one half to make one Samosa.

3. . Put sealer on one half edge of the half cookie. The sealer is shown in pink color.

4. . Lift one corner of half cookie (where the arch meets the straight cut), towards center.

5. . Left the other edge of half cookie and lay over the previous. Press to seal. Now, you have formed a dough cone.

6. . Hold the cone in your hand and stuff with filling. Filling is shown in blue color.

7. After the cone is stuffed, seal the open lip with sealer. The sealer is shown in pink color.

8. Fold the edge over. Press and seal. You may flute this edge by hand or a fork.



FOLLOW INSTUCTIONS CAREFULLY FIRST WITH A ROUND PAPER AND THEN DO IT PROPERLY AND MAKE UR DELICIOUS SAMOSAS ....................AND IF U CAN MAIL THEM TO ME !!!!!!!!

unfold pastry lay on flat surface place reguired amount of filling at one end and to one side, fold othe side over the top (like you would in first stages of making a paper aeroplane) seal it with egg wash, fold the corner towards the fold to make first triangle shape, then fold up, then fold towards the outer edge and fold up again repeat until finished then seal with egg. Would be easier to draw then write explanation! hope it helps

its all in a triangle fold it 3times the angle along the strip n you'll know where to lick it n stick it lol why dont you try makin square ones lol their more easy lol
