Maybe they are a takeoff of something else in Ireland? They are very popular in the eastern United States at St. Patricks - I have made and sold numerous dozens. As with any people who emigrate some foods change due to local ingredients and some due to generational changes. Is there anything in Irish culinary history that would possibly be the 'ancestral beginning' for the Irish Potato sweet? I would love to hear anyone's ideas or information aiding me in my research. Apparently, the candy looks like tiny little potatoes & since potatoes happened to be synonymous with the Irish --- it stuck! The original version was made with leftover potatoes (sounds weird but...), so maybe that was also another reason why the name was given.
