My husband is Indian but lets face it, he doesn't know anything about Indian cooking so I am the one trying to learn the recipes. We have tried several times to make samosas from scratch and the batter, outer shell, whatever you want to call it, always ends up chewy. We were told by the Indian lady in the store to use regular all purpose flour.. should I be using something else?

Tonight my mom made deeeelicious sweet 'n sour chicken, except that the sauce was brown. We've been to Chinese restaurants and their sauce is red. But why is that? And how can my mom make hers red too?
This is what she puts in hers: brown sugar, vinegar, pineapple juice, ginger, salt, and soy sauce.

It was like 8 years ago, I don't know the restaurant name or anything, a little hole in the wall place took me and my friends in white on vacation and fed us a great red SPICEY stew with dark meat...maybe beef, over rice they served plantains on the side. All I can remember about the meal is how good, and spicey it was, the sauce was a deep red...not as deep as mole but close! Any help or recipes would be appreciated!
