Tonight my mom made deeeelicious sweet 'n sour chicken, except that the sauce was brown. We've been to Chinese restaurants and their sauce is red. But why is that? And how can my mom make hers red too?
This is what she puts in hers: brown sugar, vinegar, pineapple juice, ginger, salt, and soy sauce.

Honestly it's a bit of coloring. Nothing will make it that red and keep the flavors the same.

Sweet And Sour Sauce I love the pinkish red sweet and sour sauce that is served in Chinese restraunts...I have tried dozens of recipes and been disappointed so I made this one by trial and error...this is the closest I have come to getting that flavor. 6 servings 2 cups 15 min 5 min prep 1/3 cup white vinegar 1 cup water 3/4 cup sugar 1/8 teaspoon salt 1/8 teaspoon msg 1/8 teaspoon white pepper 1/8 teaspoon Tabasco sauce Part 2 2 tablespoons cornstarch 2 tablespoons water 1/2 teaspoon Worcestershire sauce Part 3 3 tablespoons ketchup 1/2 teaspoon ginger paste or fresh, minced ginger 1 tablespoon olive oil Over medium heat bring Part 1 ingredients to a boil. Mix Part 2 ingredients and add to boiling mixture. Cook until bubbly and thick. Remove from stove and add Part 3 ingredients. This will keep in the refrigerator for weeks. Room temperature ketchup mixes easier than refrigerated. Serve warm.

Your mom's sauce sounds very good. If you use white sugar, a very small amount of soy sauce, and add red food coloring you will have red sauce.

Enjoy the sauce the way your mom made it - it does not need to be artificially colored.

if you want to have a sauce like chinese restaurants do.. here...
dissolve the brown sugar to the vinegar (1:1) then boil the pineapple juice with the ginger salt onion garlic and tomato paste or tomato sauce (i prefer tomato paste).. then add the mixture (vinegar and sugar).. add pepper and a teaspoon of soy sauce.. taste it then add a cornstarch (mix it with water first before adding to the sauce)..then add the pineapple chunks/tidbits if you have..if you want fish sweet and sour, blanch first the vegetables together with the pineapple juice mixute then set aside.. once the sauce was cooked.. add the meat and vegetables.. you could to it with fish fillet, or pork fillet (fry it first)
