First use FRESH spices and FRESH vegetables. Use Red, Green, Yellow , Orange and Poblano Peppers, Sun dried tomatoes, , Sweet Onions, Elephant Ear Garlic, Artichokes. Saute the vegetables in spicey olive oil or lemon olive oil, depending on your personal taste, Do NOT overdo them, Just saute a short time. You want the peppers still to have crunch. Stir in a bit of a flavored vinegar that complements your oil ( If you are using a citrus olive oil, use a citrus vinegar, If you are using a garlic oil, use a garlic or balsamic vinegar, If you are using a grapeseed oil, use a wine vinegar. The vinegar will blen with the oil and give it not only spice, but a little bit of "bite".

Make your favorite pasta, toss with vegetables

Sprinkle the salad with pine nuts or pepito nuts and a little bit of shreaded jack or real parmesan cheese.

Check marthastewart.com -- she made one a couple of weeks back with zucchini, tomatos, garlic, etc and added red pepper seeds. My mouth just watered watching it, sounded soooooo good.
