It was like 8 years ago, I don't know the restaurant name or anything, a little hole in the wall place took me and my friends in white on vacation and fed us a great red SPICEY stew with dark meat...maybe beef, over rice they served plantains on the side. All I can remember about the meal is how good, and spicey it was, the sauce was a deep red...not as deep as mole but close! Any help or recipes would be appreciated!

No potatoes, what causes red sauce, plantains not in stew, and the number you gave be in disconnected, but I honestly appreciate the try!

I know exactly what you are talking about. I just don't know the name of it. My boyfriend in Nigerian and they eat it all of the time. There is a resteraunt in town smack dab in the middle of the African district . It is called Finger Lickin on Bisonnet street. I do not have the number but they are listed. Give them a call and I am sure they can help. If not call my friends resteraunt it is called Suya Hit on West Airport ( I do not have that number either) but they have a website...www.suyahut.com i think) ask them they could tell you. West African Groundnut Stew

Ingredients

(4 servings)

2 ea Sweet potatoes
2 tb Vegetable oil
3 ea Garlic cloves, minced
3 tb Grated ginger
2 tb Coriander
1/2 ts Cayenne
1 md Onion, chopped
2 md Toamtoes, chopped
4 c Eggplant
1/2 c Stock
1 c Zucchini
2 ea Green peppers, chopped
2 c Tomato juice
1/2 c Peanut butter


Instructions

Boil the potatoes till they are just tender. Saute the garlic & ginger with the spices for 1 minute & then add the onion. Saute for a few minutes longer. Add tomatoes, eggplant & a splash of the water. Simmer for 10 minutes. Add the zucchini & peppers & simmer for 20 minutes.
Drain the potatoes, mash roughly & add to the stew. Add the juice & peanut butter. Stir well. Simmer for 5 to 10 minutes.
Serve on rice or millet & garnish with pineapple or banana slices.

3 lbs short rib of beef, cut into 3-inch lengths (a whole chicken can be substituted)
1 quart water
2 teaspoons salt
3 medium ripe plantains, peeled and sliced into rounds 1/4-inch thick
3 medium boiling potatoes, peeled and quartered, then placed in a bowl of cold water to prevent discoloration
2 medium size onions, peeled and coarsely chopped
1 tablespoon butter

Combine ribs, water and salt in heavy 3-4 qt casserole and bring to boil over high heat, skimming off foam and scum.
Reduce heat to low and simmer partially covered, 1 and 1/2 hours.
Add plantains, drained potatoes and onions and simmer for 30 minutes or until meat is tender and potatoes are mashed easily.
With tongs, transfer short ribs to a plate.
Remove bones, cut fat off.
Cut meat into 1/2" pieces.
Puree soup return to casserole.
Stir in butter and meat and simmer to reheat.
Serve in soup plates.
