There is a nice French dish "Filet d'Hereng avec pommes de terres a l'huile" which involves an uncooked herring fillet, basically a raw kipper.
Now we all know that raw fish is fine to eat (sushi) and kippers are both cured and smoked. So why when I go to Sainsbury's to by the ingredients for Filet d'Hereng avec pommes de terres a l'huile I see a sign next to the kippers saying "this product must be cooked".
What on earth do they do to them?
