Get so good at cooking your own you wont want anyone elses. I don't eat steaks from restaurants . They aren't as good as mine. Email me and i will give you the recipe

Go to a steak house (not a stake house, by the way). Tell them you want a rare steak. When they bring it, BEFORE the waitperson walks away, cut into the center of the steak to check it. Most good steak house waitstaff will ask you to do this anyway and will check with you to see if it's cooked to your liking.

If the steak is not cooked to your liking, do not be afraid to send it back. Don't be rude about it, but don't settle for less than what you want. You are, after all, most likely going to pay a pretty price for that steak.

If you go to a good Steak House, they usually won't cook stakes well done. Rare isn't usually a problem.

There used to be a woman who came into my restaurant who wanted a ribeye "Rare rare rare!" I asked her if she was serious. She said "30 seconds on each side, no more!" OK. If that's what they want, that's what they get.

That sucker was barely seared. And she loved it and kept coming back. Now don't get me wrong, I love carpaccio, but a cold raw ribeye?? Ewww. But the customer is always as right as they want to be.

I would think they would offer it rare since it is so hard to heat iron all the way through.

You mean steaks, I think, old boy.

Maybe you need to find a better restaurant, or one that specialises in steaks, or employ your own chef.
