There is a nice French dish "Filet d'Hereng avec pommes de terres a l'huile" which involves an uncooked herring fillet, basically a raw kipper.

Now we all know that raw fish is fine to eat (sushi) and kippers are both cured and smoked. So why when I go to Sainsbury's to by the ingredients for Filet d'Hereng avec pommes de terres a l'huile I see a sign next to the kippers saying "this product must be cooked".

What on earth do they do to them?

You're right, it's a great dish and simple to make.... but kippers are smoked so that would give a completely different taste, its fresh herring fillets you want.
The fillets are not cooked but marinaded in oil for several days. Have you tried Waitrose?

The Co-op does those interior the fridged section Scottish smoked kippers some peppered or basic, not often a bone, no bones approximately it, yet continually beware! Regulary i'm getting those they're vaccum prepacked the final i've got stumbled on likes those (licks lips). And final stored interior the chiller.

It's a kipper,thats whats wrong!
Could be Sainsburys,Tesco or completely up their own ar se M and S kipper but at end of day is still foulest fish ever,lol

Ordinarily, yes you can eat them raw.

In this case the reason you have to cook them is because of the treatments used on the fish when transporting them to your local store.

Smoking is bad for you. It made the kippers ill and they had to be cured.

Perhaps the sign wasn't an instruction "You have to cook these kippers", but an exclamation "These kippers have assuredly been cooked!"
