I am finding that we are stuck on eating potatoes or rice. When I cook chicken, pork chops, fish or beef, what are some other alternatives when it comes to side dishes?

We were at a real nice Italian hall for a holiday party Friday night. They had a green olive appetizer with finely chopped green olives, a hint of garlic and I don't know what else. And you put in on a tortilla chips, or pizza dough like stuff. Any help?
