I am training my staff in a four star hotel the correct way to fillet and serve dover sole in front of guests but am struggling to find a description of how to do it. I know that some people like to use two fish knives whilst other people like to use a fork and knife but that is about as much as I have managed to find out!

I wanted to know if anyone has any baking ideas for winter or boiling. Anything that is not heavy on the oil no fried or breaded chicken please. I like flavor, so things with herbs are appreciated. I would like to make breasts and not a whole chicken. Any good low fat winter recipies would be appreicated. I love chicken.

I want some healthy warm dishes for winter and I love chicken. If you have a good recipe for a chicken caseorle that is not based on a flavor packet. I want something that is not heavy on the fat. some fat is okay, but not huge amounts this will be for daily consumption.

Can anyone please recommend a really good chocolate fountain that doesn't cost a fortune (and where's it from?).
