We all know that there is a theory whereby hot air rises and cold air sinks right,then why would we feel cooler at the top of the mountain instead of hotter (since theres a theory"hot air rises, cold air sinks"??

If it is just an assumption, then it could be wrong. What if it's wrong? That's something puzzling me. I mean, what if there's some matter in the Universe which does not obey the law?
