Nothing. Microwaves are built with an interlock in the door. When you open it, it will over-ride the other controls and shut off power to the magnetron regardless where the timer is. No more microwave radiation will be generated as long as the door is open.
There's not lingering microwaves either. Microwaves travel at speed of light.

the microwave generator is already stopped by the time the beeping starts.
some microwaves can be opened while running, a door switch supposedly turns of the generator before the door is open enough to allow the photons to escape.
if you jimmy the door, you have what is known as a death ray.
microwave radiation kills by heating internal tissue.

Nothing ..it's already switched off. Opening the door before the beeping stops however, stops the beeping.

The microwave has a trigger to turn off when it is opened. Usually, once the beeping starts, the cooking is done anyway.

It shuts off. Microwaves have a trigger switch inside that's rigged to stop the cook cycle when the door is opened. If for whatever reason the microwave DOESN'T stop cooking when you open the door, get rid of it and buy a new one! Microwave radiation in small doses is fairly harmless, but can hurt like hell.

Nothing much happens, it will beep a couple of more times depending at what beep you opened it up.

When you open the door all the circuits are opened so there's no way it can generate any microwaves. You might get a face full of steam if you really cooked something too much though.

I have heard that the radiation is not all gone before the beeping stops and that you should wait...whether or not that is true, I have no idea.
