Why do people believe in one God, excluding the possibility of others.?

I understand that people have different standards for how much proof they need, before they believe in something. What I don't understand is this.
If the major proof of God's existence is old records and eye-witness accounts from 2000 years ago, how do you justify believing in those and totally disregarding witnesses who claim to have met other gods from other religions all over the world.

Repeat Questin ... revised for clarity. Why does cold water cool hot water faster than hot water heats cold?

For example when i go to take a bath if i leave the cold on too long it takes way more hot water to heat it back up then if the oppostie happens and i have to cool down a too hot bath with cold water? i know what i am trying to ask i hope it makes sense on here.

What happens to objects traveling slower than the speed of light, if they accelerate to a speed faster than...

the speed of light?
and... If Special Relativity allows for things to exist traveling faster than the speed of light, why and how would they be destroyed if they slowed to fall beneath the speed of light?
