I was trained iin the culinary institute of america and there they discouraged this practice saying no information about the wine could be attained by sniffing the cork. Since then I have run into many people who disagree with this (conneisueres, chefs and even sommeliers) theory. Can anyone give a definitive answer on this or is it just a gray area?

...I think most everyone will agree that breast-milk is best due in large part because it is "natural". Yet, the vast majority of parents who were so concerned with what was 'natural' in the beginning aren't as concerned as the child gets older. Instead of pushing organic foods, we think nothing of letting our kids eat processed junk. Why don't we continue encouraging natural stuff as our kids grow?
