You can't add too much flour. The amount of flour added affects the texture of the gnocchi. More flour yields denser gnocchi; less flour yields lighter gnocchi. It's a matter of taste. I prefer it a little denser - the dough should be fairly firm like stiff Play-Doh.

You can certainly add too much flour. Follow the recipe to a T and you should be fine. Typically pasta or dumpling type recipes tend to allow room for extra added flour. Start with a tablespoon at a time until it is no longer stick city.

Add flour, a little at a time, just until your dough holds together and stops being sticky. If you add it a little bit at a time, it's easier to get the right amount, and adding a tiny bit more by accident shouldn't hurt it.

yes you can add too much flour, and then you would have to add some water, but that might be to much, so then you would have to add some flours, etc. etc. until you have the dough ball that ate Chicago. Just add it really slowly and make sure you mix it in well. But if you touch it too much the gluten breaks down and then it is rubbery.

Too wet means you have to add more flour:when the dough is soft but not wet, it's enough. Sometimes to make more delicate I add potato starch> Be careful to choose the old potatoes, red are OK or baking ones are good as well.

You should be able to roll it out into a log. Put flour on the countertop and take as much as you need.
