Everyt time I fry it, the skin falls off and the rest of hte chicken gets too greasy. What are some tips to frying really good chicken?

sweet potatoes, idaho, red. yukon gold,, any kind
I love to have mashed idaho potatoes with butter, salt , pepper, and milk (sometimes cream cheese or sour cream too)
i love to grill sliced sweet potatoes in a foil pack seasoned with paprika, chili powder,olive oil, garlic powder, and seasoned salt..

I've heard that you put them upside down (after cutting the tops off) in about an inch of boiling water to cook them. Can someone give me *details* about timing and how to serve them? Also, I was watching Rick Steve's Europe show and saw someone peeling them with a paring knife. Does anyone know how that would be prepared? Any artichoke recipes would be welcome, as would any "non-traditional" veggie recipes. Thanks!

We don't buy packaged rice because of the sodium content, so all we're left with is the plain white or yellow rice. Don't suggest cous cous or basmati type rice please - they're far too expensive. What I would like is a way to turn regular rice into things like rice pilaf! Some pizazz - something other than drudgery! Also, alternate suggestions for a whole grain starch (I know about potatoes) that are reasonably priced are welcome. Thanks!
