I love cooking easy meals too; especially when you know you will have a busy day and it is a hot summer day but you want a real meal not just another bowl of cereal or icecream...invest in a crock pot...you can put beef with a can of cream chicken or mushrooms soup and can water; chicken or turkey or with gravey; a pork loin or roast cut into chunks with bbq sauce, or roast with the appropriate veggies and water...Turn on and let cook till you get home! Make sure there is enough liquid to cover meat as not to dry out...meat will be pull apart tender and juicy. Easy potatoes (they come in a box now!!!) as a side and frozen veggies are a snap.
My favorite summer sweet is orange salad...it does require a little more time; like 15 minutes top; but it is a cool summer treat: 2 lg tubs cool whip, 8oz of whipped cream cheese, lg box of dry orange jello mix, 2 cans of crushed pineapple---drain well (that is the time consuming part) and 1 can of mandarin oranges--drain as well. Mix (electric mixer works best) all ingredients together and chill in fridge; can make up to 24 hrs in advance...some juice may settle...just mix and top with mandarin oranges, pineapple chunks and cherries...yum!

For sweets, try this easy banana pudding recipe:
5 bananas
2 lkgs instant vanilla pudding
1 12oz container of sour cream
1 box vanilla wafers
2 large size Cool Whip Topping
In a very large bowl, mix the pudding with the sour cream. Stir well to dissolve the mix. Add cool whip and stir well to mix again. Add sliced bananas, crushed vanilla wafers. I like to save a few whole vanilla wafers and banana slices for garnish along with a few cherries.

My boyfriend and I recently went out for dinner and instead of ordering seperate meals we ordered little ones to share.
We got oven baked potato wedges with sweet chilli sauce and sour cream and steamed vegetables with melted butter and bruchetta. You can easily make all these at home.
Bruschetta is just good italian sliced bread lightly toasted and rubbed with fresh garlic, top with fresh diced tomatoes, chopped basil, olive oil then grilled slightly to warm tomatoes. Drizzle balsamic vinegar on top and cracked pepper and salt.
We don't eat sweets, so I can't help you with that one.

For some reason I have been craving (and making) rib-eye steak, sliced in little piece's, sauteed in butter with onion and garlic, served over noodles. It tastes so good to me. My husband doesn't like it but I love it.And my favorite dessert is coconut cream pie.
