Chicago Public School Cafeteria Butter Cookies
2 sticks (1 cup) softened butter
2/3 cup granulated sugar
2 cups plus 2 tablespoons all-purpose flour
2 teaspoons vanilla extract
Preheat oven to 350 degrees F.
Cream butter and sugar until fluffy. Add vanilla extract. Mix in flour in small increments. Roll dough into balls; Flatten on ungreased cookie sheets. Bake until golden brown.
Makes about 1 1/2 dozen.

Sugar Cookies
1/2 cup butter
3/4 cup granulated sugar
1 egg
2 tsp vanilla
1 3/4 cup all purpose flour
1/2 tsp baking powder
1/4 tsp salt
In a large mixer bowl beat butter until smooth. Add sugar, beat until fluffy. Add egg and vanilla. Beat well.
In a medium bowl stir together flour, baking powder and salt. With mixer on low speed gradually add flour mixture to butter mixture. Beat until well blended. Stir in the last portion of flour with a spoon, or use your hand.
Shape dough into 6 inch rolls. Roll them in sugar. Wrap tightly in waxed paper, then plastic wrap. Chill for at least one hour or you can freeze up to 6 months.
When ready to bake, preheat oven to 375 degrees. Remove wrapper, slice cookies into 1/8 inch thick rounds. Place on greased cookie sheet, bake for 10 minutes.

1/4 tsp nutmeg
1/4 cup milk
Sugar for rolling and sprinkling
Cream butter until smooth, add sugar beating until well blended. Add egg and vanilla. Beat until fluffy.
Combine dry ingredients. Add to sugar mixture, alternately with milk.
Shape dough into logs. Roll in granulated sugar. Wrap each log tightly in plastic wrap and chill for 2 hours or overnight.
Preheat oven to 350 degrees. Grease baking sheet. Remove plastic from logs, slice into 1/4 inch slices. Place on prepared baking sheet about 1 inch apart. Sprinkle with additional granulated sugar, if desired. Bake for about 8 to 10 minutes.
