I am using 3 grms S500 and 30 grms instant yeast to 1kilo of flour.Have I got it wrong?

I've never had much chance to experiment with baking, and mine nearly always turned out a bit rubbery and stodgy. Once or twice I got them perfect.
The stodgyness was fine as I made them with healthy stuff to use as breakfast cereal.
