I am using 3 grms S500 and 30 grms instant yeast to 1kilo of flour.Have I got it wrong?

Sounds possibly like too wet dough OR under mixed/kneeded OR over-risen just before baking.

Try looking up the website for the improver for other hints?

why do you use this rubbish? bread comes the same if you add some maltose or add 2 tablets of vitamin c (the ones that are tastless) that is what makes saccharomices cerevisiae grow properly. besides witamin c is destroyed by the heat so you will dind only water and CO2 as byproduct
ah i read the s500 on google, well use more olive oil and no milk or both no oil and milk and you will get crusty bread
