What is called "red cabbage" is really more of a purple color (not red like an apple.) It's just a different variety of cabbage.

It is purple cabbage and you can find it in the produce department where the green cabbage is. The heads are usually smaller and you see it alot in salads, but it is good sautee'd with some apples.

There is a variety of cabbage, that is called red cabbage. Very common (*not purple)

I am in India. In hills of Nilgiris, at 5000 metres above sea level, there are many plantations.

Purple cabbage is found here. Just like the normal cabbage, but pigmentation is purple.softer, easy to cook, and best for salads.

Others are mangustans, water tomatoes, forest berries,
and a wide range of fruits and vegetables.

It is known as Red cabbage ( turns Mauve if cooked) Brassica oleracea var.

Best use is in Salads

Shredded cabbage mixed with chopped onions, capscium, crushed garlic, sugar, pepper, salt. Mix well and keep ready


yoghurt / cream 1/2 cup each.Mix cream just before serving.

My fav. salad

Looks gorgeous when used at table dressing.

Its not purple cabbage...its actually red cabbage
The purple color in red cabbage comes from a class of pigment molecules called anthocyanins. It turns out that anthocyanins are found in flower petals, leaves (it makes them turn red in the fall!) and some fruits such as blueberries. Anthocyanins are plant pigments known as flavenoids and produce red, pink, violet and magenta colors in the various plant parts.
