My temparture gage does not show that the car is running hot. But when I get out of the car the water in the overflow in bubbling. I have changed the thermostat but it is still doing it. Any Suggestion?

I have a 2000 grand prix, and just found out after three years that it takes 87 octane gas, not the 93 I was told to put in it. Now I want to make sure I'm actually going to save money by switching to 87 from 93 octane. Help appreciated.
