Since all the atoms are linked to nitrogen in their respective bonds,the polarity could be arranged based on the polarity of other atoms as followed:

N-F > N-O > N-S > N-P > N-C

please help in arranging in the order of decreasing polarity

It seems like there is more going on then simple dillution. I know coffee is acidic pH 5.0, that might have something to do with it.
