It seems like there is more going on then simple dillution. I know coffee is acidic pH 5.0, that might have something to do with it.

Coffee is acidic and milk is slightly basic so all you have really is the coffee becoming a little less acidic which is why people put milk in their coffee in the first place. But there's not a major reaction going on.
