Treat the fish with Aqua Regia (Mixture of HCl and HNO3) and then test for Hg.

There is a fairly simple test for mercury which some individuals will perform on as few as one fish. Ask in a bait shop or fishing supply shop. They should be able to put you in touch with someone who does it. Larger labs or state facilities will do it but they may be more difficult to get in touch with. If this is for a science project, the private tester will be more than happy to tell you the procedure with the thought that increase in business will follow publicity.

It is highly unlikely a high school lab would be equipped for such a test. Perhaps you could do a qualitative test, which is where you only determine the presence, not the amount.
