am i correct in believing that in humans (mitosis) its always diploid. but in meiosis it goes from diploid to haploid to haploid?

What causes this and why does it happen?

For example:
I can blend ice cream/banana/milk, etc and drink it all just fine, but if I ate ice cream I would feel full faster. Assuming there's an equal amount of each.
