Oh! Quesadillas are really easy. Buy a package of flour or wheat tortillas (whichever one you fancy). Buy cheese (or veggie cheese) and all the veggies that you like - tomatoes, onions, green peppers, jalapenos, etc.
Chop the vegetables into bite-sized peices. Heat up a small or medium skillet with a bit of EVOO in the bottom (so they won't stick). Once the skillet (or pan) is fairly warm (but not too hot), slip one tortilla into the pan. Throw your cheese and veggies on top of it, spreading them to the outer areas of the tortilla. Put another tortilla on top and just stand back and let it cook. (similar to a grilled cheese sandwich, just check the cheese to make sure it's melting.) Once the cheese melts reasonably well, flip it over and cook it slightly on the other side - or just until brown. Remove from the pan and use a pizza cutter to cut it into 8 wedges. They are a perfect finger food and taste great when dipped in salsa!

Grilled up some of you favorite Veggies, green peppers, onions, mushrooms, whatever. Then grab a tortilla shell. put in the veggies on one half, maybe add some diced tomatoes. Top with some shredded cheese, fold the tortilla shell over and use a foreman grill for like a minute or 2. If you dont have a foreman grill you can use a toaster oven or put is on the frying pan, or worst case use a microwave. add some sour cream and salsa on the side and enjoy

I love this recipe: Chop up bell peppers, onions. In a pan saute onions, peppers, frozen corn kernels with salt and pepper until cooked. (You can even add canned black beans that has been drained well). Place a tortilla on a warm skillet and spoon the veggie mix onto one half of the tortilla and sprinkle shredded cheese on top. fold the tortill and after a couple of seconds turn it over carefully to melt the cheese. Cut up in wedges and serve with salsa, sour cream or any other topping of choice.

Saute a large sliced protabello mushroom in olive oil. Saute onion and bell pepper in same. Place a large burrito sized tortilla in a dry skillet that is hot. Put in a cup of shredded cheese. put on top of this the sauteed veggies. Put a bit of picante sauce on top of this. Cover with a second tortilla. Cover skillet with lid. Allow cheese to melt. Turn whole thing over (carefully). Heat another 30 seconds. Slice like a pizza.Serve with guacamole on side. Essentially mashed avocado with picante sauce stirred in.

A delicious and easy snack, I make cedillas all the time! I love my toaster oven, because we can make a queasily in about 3 minutes. Shred some cheese on a tortilla. I like flour, my wife likes corn. Toast just until cheese melts (or, you can bake at 300 or fry with just a drop of oil on a medium pan.) I fold mine, and I place two tortillas together, cheese to cheese, for my wife. She likes salt and hot sauce. I like mine plain. You can put anything you want in them though, like rice, beans, corn, steamed veggies (cook first,) veggie ground meat, salsa, lettuce, cilantro, sour cream, etc.
I'm hungry!

Tortilla, sprinkle cheese on top, add cut up veggies next, then anothe topping of shredded cheese - add seasonings if you want, add another tortilla - heat, let sit for a few minutes, cut and serve
