Suet (beef fat) can be found in some stores, you can ask the butcher in your local store if he can give or sell you some. Now-a-days they sell it as something to feed birds. Lard may make a good subsititute, but suet is beef fat where as lard is pork fat. Since it is from different animals, using lard may change the flavor a bit.

NPR just did a segment on Christmas pud that called for butter instead of suet. Lard definitely won't do. I think you can find the recipe on their website

Isn't 'suet' lard? People can still buy lard and cook with it, even though it isn't the healthiest ingredient one time isn't going to kill you.

Use vegetable shortening. I do all the time.
Don't use bacon fat. It will taste like it.
