the fda is starting to regulate fast food resturants into using only vegetable oil. That doesnt however mean they wont cook meat products in the same oil as the fries.

Every where is different. different country's have different laws but it is always safest to ask "what are they cooked in? "and "what are they pre cooked in? "Many places cook there fries in vegetable oil at the shop but buy pre cooked chips that are cooked in animal fats.
For the pre cooked they may need to check the bad they come in and if they give you an answer like they are not precooked or something ilke that ask them to check the bag or ask for someone else to serve you as nearly all chips are pre cooked.
You also have to be weary of some salts they use as some companys use animal products in there salts.
EVen if you are not vegetarian it is best to ask about the 2 questions above as vegetable oils are a lot more healthy then the animal equivalent fats.

Animal fats are way cheaper then oil as they are leftovers which is why they are atractive to many places

Some restaurants, such as McDeathburger, uses beef fat to flavor their fries, but there are places that use vegetable oil only to cook their fries without animal flavors. However, some places also cook meat products in the same fryers as the fries. You will have to ask about both before eating at a restaurant.

Bought deep fried chips are now being cooked in vegetable oil now. You would have to ask at the counter.

Most bagged ones are label how they are prepared. Check the label and the nutritional information box.

Lard is out of the question because it has trans fatty acids and isn't allowed to be used in restaurants in the US. Beef tallow or pork lard is bye bye. He is just uninformative or is scarying you. It is made of either peanut oil or vegetable oil because its high smoke point.

Depends on what they're fried in ;)

Also some fries have tallow (Think: Mcdonalds) and some have dairy in them.

Could be either or a combination of both. You would need to ask what a particular restaurant uses to be sure.
