It's not exactly light, but why not a traditional pumpkin pie. If you want something light, you could do a trifle. Giada deLaurentiis just did one where she put a few cubes of panettone (Italian raisin Christmas bread) in the bottom of a wine glass, sprinkled them with coffee liqeuor, and topped with chocolate mousse and whipping cream. I'm sure there are many similar recipes out there. You could also make a trifle in a big container instead of doing individual ones.

Mixed fresh fruit tossed in cointreau (or whatever) with a sabayon drizzled over it which is a light custard made easily by whisking a couple of egg yolks, a dash of brandy, a handful of caster sugar and a squeeze of lemon juice over heat untl it thickens. Takes about 2-3 mins and is great!

Angel food cake with fresh strawberries(or any other berry you like) and whipped cream as garnish. Non-fat, (except for the whipped cream) pretty low in calories and delicious.
