Mole is a red colored sauce made from various red chilis, garlic, onion, broth, nuts, raisins and chocolate.

Verde is a green sauce/salsa usually made from tomatillas, jalapeños, onions, garlic and cilantro.

Both are quite ubiquitous in Mexico and their recipes vary widely.

It depends on how each is made as to which one is better for you.

Out of those two, mole enchiladas are my favorite, but cooking mole is a tad more complicated than cooking up a green salsa.

Mole enchiladas are usually best with chicken, so apart from cooking up the mole, you also need to cook your chicken, so that makes them a bit more labor intensive.

For green enchiladas though, you can use both chicken or cheese. So that makes things a lot easier, when you're feeling lazy, you just cook up a quesadilla (don't forget to add some oil to the pan though, when cooking enchiladas you need to fry the tortillas a bit so they'll hold up to the sauce without getting soggy).

Personally though, my favorite enchiladas when in a time crunch are CHIPOTLE enchiladas : ) I just cook up some quesadillas and add some of this uber delicious chipotle sauce on top http://www.mymexicanpantry.com/salsa-de-chile-chipotle-dona-chonita-la-costena.html
When I'm feeling especially crafty I top with some mexican cotija style cheese and some lettuce or such.

AN ENCHILADA IS A BASIC !
you soften the corn tortilla by semi frying in oil,
then fill ( with whatever ,beef chicken cheese's, even veggies )
the only difference your looking for is the mole ( usually red -but can also be green and brown )
red is a sweet chile base sweetened with chocalate
the green is a more tart base with the tomatillo
the brown is kinda inbetween and its made with toasted pumpkin seeds (better known as pepian )

as far as nutrition they all have a very good value especially when you add the sides of rice and beans and a small salad !

Gee, mole is a great sauce, no matter what other people say and it is not made with peanut butter (gag). It is a mix of spices and there are as many recipes as there are days in the year. Verde sauce is made with small green tomatoes called tomatillos and with cilantro, onions, chile and garlic. The taste is vastly different. It is like asking which you prefer, vanilla or chocolate milkshake, they are both similar but also different.
I will eat both anytime.

I love both ... if they are made with Mole ***** (black mole) I can eat as many as my stomach resist.
Enchiladas verdes are very good also. Both can be filled with chicken or vegetables or cheese.
Mole is more heavy for your stomach but is a delicatessen.

Mole is gross!! It's a chocolate chili sauce and it's just as nasty as it sounds! Verde means "green" in spanish and most verde sauces include tomatillos, green chilis, garlic, onions, etc. Verde sauce is very tasty. As far as healthy goes, most traditionally made enchiladas aren't real high on the health-o-meter. Soft fried corn tortillas, lots of cheese......you know, the not so good for you stuff, but they sure do taste good on cold night with a cold beer!

Mole is chocolate based and to me is horrible. Verde is more vegetable based and tastes much better.

Main difference is that mole sauce uses tomatoes and verde (green) sauce uses tomatillos which is from the nightshade family.
