Two slices of whole grain bread or your favorite. Now mash up an avocado with a little lime, shave some lettuce really fine, some grated carrots and any vegetables that you like. It is my sons favorite but he eats dairy, eggs, and fish so mayo is on the bread.

No chick peas? No hummus? That's too bad, it's awesome in a sandwich.

Take some firm tofu (not silken). Squeeze the water out. Slice it thin. Now you can marinate it, but you don't have to (try the "faken" recipe if you need a marinade idea). Soy sauce is good to marinate it in, or whatever you want. Then fry it up in a frying pan until it's crispy. You can store this in the fridge in a air tight container and put these slices on your sandwich with any of the following: cheese, mayo, pickles, green onions, sesame seeds, pickled jalapenos, alfalfa sprouts, salt and pepper, chili flakes....

Different kinds of bread can add variety too. Try toasting the bread first, it makes a nice crunch.

Cucmber, lettuce, avocado and hearts of palm. They're all easly available at any store. But the key is... the dressing... that maks all the difference... get a nice vegetarian dressing and you can make any sandwich and you'll love it.
My favorite is simply bread and avocado.

Fried tofu is good on sandwiches or rolls, with lettuce and sweet chili sauce; sliced roast pumpkin, pine nuts, feta cheese and baby spinach is a good filling.

Take a good grain bread and put a little mayo on it , cover it with some sunflower seeds, sliced apple and cheddar cheese. Toast. It is soooo good. You can add sprouts under the cheese also if you so desire.

Try this on wheat bread:
A slice (or two) of provolone cheese, mayo or vegan mayo, lettuce, cucumbers and marinated artichoke hearts. it's really good.

Hippie Chick P.
Not just for Vegeterians... ground chickpeas and tahini, layered with avocado, lettuce, tomatoes, cucumbers, red onions, cilantro and cheddar cheese

instead of ground chicpeas, you can use hummus, my vegetarian friend also eats peanut buter and honey in pita bread
