I personally follow South Beach phase 2 food plan. Everyone in my house eats only what I can eat. I make very few concessions even when the grandchildren are here. I am afraid for them that they will become diabetic in high school because they would rather sit and play video games than go out and run with the animals. Yes, I live very rural so there is no reason for them to be afraid to go outdoors here.

Just feed them 1/3 protein, 1/3 fats, and 1/3 carbs in the foods you can yourself eat. They will be better for it.

Definitely try to meet with a nutritionist. Ask your doc for a recommendation. in the meantime, a good start might be to modified recipes you are already familiar with. Replace replace all white bread with low-carb whole wheat, replace white rice with brown rice, replace regular pasta with whole wheat pasta. These all have carbs of course but since you will be watching your carb portions they alternatives are more nutritionally dense. Other suggestions for healthier eating: use cannola and olive oils, ground turkey instead or ground beef or pork, grilled or baked chicken.
