Its used as a binding agent

There was a lot of concern over where quorn sourced its eggs when they first started out. They used battery hens eggs.

But, after lobbying from veggies and the vegetarian society they changed about 4 years ago to using only free range organic eggs.

Quorn is sold (largely in Europe but also in other parts of the world) as a healthy food and an alternative to meat, especially for vegetarians. As it uses egg white as a binder, it is not suitable for vegans.

michael H free range eggs are not that much better than normal eggs at all i read in this advice column that since there is no like thing that says how free range chickens must be treated, they are still badly abused. sorry just thought id let you kno eating free range isnt better than eating normal eggs.

It's used as a binder. They claim they can't find a vegan binder that works as well. Whatever.
