You can serve keesh. Vegetable lasagna. Something with a portabella mushroom is always nice. Spaghetti with just marinara sauce.

Appetizers: Crimini mushrooms en croute (top with herb and garlic boursin and wrap in puff pastry), Artichoke fritata bites,
Bruschetta with sundried tomato ragu
Main Dish #1: Eggplant Parmegiana with sundried tomatoes
Main Dish #2: Linguini with Pesto
Main Dish # 3: Angel Hair pasta tossed with artichokes and sundried tomatos
Side Dish # 1: Tossed Green Salad with garbanzos, pinto beans, goat cheese or feta and Italian Vinegrette
Side Dish # 2: Roasted baby beets with goat cheese
Side Dish # 3: Grilled asparagas with parmesan
Dessert: Chocolate fountain, cupcakes, gingerbread trifle

Pastas, Vegetable, Vegetable Casserole (like broc or mushroom), soups, salads, etc..... for apps like bread bowls...... :) check out yahoo! foods recipes in their vegetarian/vegan section. If they all aren't just vegetarians and some are vegans. Write little notes on notecards, "Contains Milk Products" =]

Veggie pizza is always a favorite! You know the kind with the cream cheese and what not it' s served cold not the warm kind. an Assortment of v-8. all kinds of fruit, different types of breads and pasta salads too, things of that nature! GOOD LUck!

Well, try this one......
(1) Vegetable soup
(2) Tofu with veggies
(3) Tofu-Q with Veggies
(4) Boiled Sweet Potato Leaves Juice
Hmmmmmmmmmm....... Now I'm hungry :)
(1) For Veggies soup....
cubed 2kilos carrots
thinly cut 1 kilo Chinese cabbage
chopped 20 celery stalks
thinly cut celery leaves from the 20 celery stalks
3 canned sliced mushrooms
3 canned corn soup
10 pcs chicken cubes
In every chicken cube, put 2 cups of water. So you will use 20 cups of water for the 20 pcs of chicken cubes. Bring to boil for 3 minutes only with all the ingredients.
(2) Tofu with Veggies
30 pcs. cubed Tofu
3 kilos green peas
2 kilos cubed carrots
3 kilos thinly cut Chinese cabbage
10 pcs. chicken cubes
10 Tsp cornstarch
4 kilos red bell pepper (cut into 8 pcs)
4 kilos green bell pepper (cut into 8 pcs)
4 kilos Brocolli (cut in desired sizes)
20 stalks celery, thinly cut
celery leaves from the 20 stalks celery
4 canned whole round mushrooms
In every chicken cube, use 1 cup of water. So you will use 10 cups of water. Bring to boil with Tofu, carrots and mushrooms. Then add other ingredients and bring to boil. Then remove from fire. Serve. Hmmmmmmmm so yummy!!!!!!
(3) Tofu-Q with veggies
Marinate 30 Tofu cubes
4 kilos green bell pepper (cut into 4 pcs)
5kilos cheery-sized tomatoes
4 kilos lettuce
4 kilos white onions (cut into 4 pcs)
5 bags Marshmallows
B-Q sticks
Steam all the ingredients except marshmallow. Place lettuce on the big plate. Then put tomatoes,white onions, Tofu, green bell pepper and Marshmallow in this order to the B-Q sticks. Then arrange the Tofu-Q on the lettuce. Then serve!
(4) Boiled Sweet Potato Leaves Juice
20 bunches of sweet potato leaves
3 kilos sugar
2 kilos citrus fruits
In a caserole, boil half amount of water with the leaves. Then let it cool for one night. Then mix it with sugar and citrus fruits. It will turn into orange or peach color. Serve with ice.

do you mean finger foods or hot buffet? If hot buffet then some sort of pasta or veggie chilli, if finger foods then mini quiche/pizza vegetable patties, vegetable kebabs, salsas and nachos, brushetta
