Bean Salad
1 C. cooked pinto beans
1 C. cooked garbanzo beans
2 C. sliced green beans, steamed
1 C. bean sprouts
1 C. chopped green bell pepper
2 stalks celery, chopped
1 mild onion, chopped
Vinaigrette dressing
Optional
2 C. chopped broccoli or cauliflower, blanched
2 carrots, sliced
Combine beans, sprouts, green pepper, celery and onion in a bowl; mix well. Pour dressing over salad, tossing to coat. Chill until serving time. Yield: 8 servings.

Summertime Salad
2 cucumbers, peeled, coarsely chopped
1/4 to 3/4 C. chopped onion
3 large tomatoes, chopped
1/2 t. salt
Combine all ingredients in a bowl. No need for dressing! Yield: 5 servings.

Easy Peach Cobbler
Yummy peach cobbler and it's vegan!
Ingredients:
1 cup all purpose flour
1-1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup sugar
1 cup plain soymilk
dash of cinnamon
1/4 cup vegan buttery spread
1 16 oz. bag frozen peaches
Directions:
Preheat oven to 350 degrees Fahrenheit.
Thaw peaches and reserve the juice.
Put all dry ingredients in a bowl. Add the soymilk and a dash of cinnamon. Mix the batter until all ingredients are incorporated.
Meanwhile put the vegan buttery spread into a 8"x8" glass baking dish. Put the dish into the oven to let the margarine melt completely.
After it is melted, take the dish out of the oven and pour the batter on top of the margarine. Spoon the peaches and juice on top of the batter.
Bake for 35-40 minutes. The batter will rise up around the peaches.
Let it cool after taking it out of the oven. I find it tastes better after it has cooled. Enjoy!
Serves: 8

Peanut Butter Power Mix
Ingredients:
1 tablespoon all natural peanut butter
small amount of agave nectar (depends on your taste)
1 tablespoon raisins
1 teaspoon sunflower seeds
1 teaspoon sesame seeds
1 teaspoon pumpkin seeds
1 teaspoon coconut flakes
(All these measurements are just rough estimates. Use more or less if you like)
Directions:
Mix all the ingredients together in a bowl.
Eat like that, or, make a ball and roll it in either the sesame seeds or coconut flakes. You could always double or triple the recipe and make smaller balls. I would suggest that if you do make the balls, refrigerate them for a half hour or so, until they're firm.
This is a really great snack or dessert. This recipe is very similar to the Power Balls I used to get at my local organic foods store, only they used honey and chocolate chips. It's so simple to make, and it's great for someone who has a sweet tooth like me! Just be sure not to eat it all the time though. I would imagine the fat content to be quite high because of the peanut butter and all the seeds.

I'd be grateful for ANYTHING vegan that isn't jacket potato and baked beans. Apart from a little bit of limp salad that's usually all a vegan can have in a pub, and even then you can't be sure the beans are vegan (a lot of cheaper brands have milk added).
Everybody else's Friday lunch time treat at the pub can be boring for vegetarians, but it's deadly dull for vegans.
Hummus and pitta bread, chilli, vegan pizza once in a while, a vegan pasta dish that isn't just pasta and tomato slop - not all of them every day, just one 'special' at a time would be a major life improvement. Even vegan sandwiches and rolls (hummus, roast veg, Redwoods Cheatin' Bacon or Cheezley or Tofutti cream cheese) would be great. Again, not all have to be offered at once; a choice would be lovely, but one vegan option is usually beyond our wildest dreams at the moment.

Definitely vegetarian chili and pasta. What about french fries or cheese fries or chili cheese fries? Mozzarella sticks? Fried mushrooms? Little appetizers like that would be great for a pub. Also, pizza topped with veggies would be great. Maybe even pretzels or nachos.

I am not veggie but when we go to local pub/tavern I prefer fare that is more like finger food. So maybe add a dish tha tcan be eaten like a meal, like you suggested, and maybe something like the fried green beans that TGIF has. The fried zucchini strips mentioned above sound good or maybe potato skins that have no bacon on them.
That is very nice that your brother is thinking outside the box on his pub grub!

We have a Brewers Fayre near me (who doesnt) and they do a nice goats cheese and onion tart. My gf chooses it sometimes and she isnt even veggie
You said vegetarian not vegan so I assume goats cheese is ok.
How about something mexican like vegetarian fajitas or burritos. Something with a bit of spice instead of the usual bland rubbish

No, please, not pasta again.
How about puff pastry parcels with roated vegetables in them, or tartlets with a mushroom pate, or nut croquets, or Marinated tofu nori and Japanese slaw.
I like food and am more than happy to pay way over the top for it....goats cheese something or other, deep fried brie etc are good pub standards.....but not pasta again.
I hope he does well from it and he feels he wants to expand the menu more and more.

I think good pub food would be potato skins with Tofutti sour cream and cheese. I wish they had some vegetarian pub food around where I live.
