i find that maybe the chinese food in canada is tast different in china. why?

They have different, more authentic true to taste ingredients in China and the true products at their fingertips. Over here, they need to have it shipped over and it's preserved in a different format. The cooks also have to Westernize the flavor or it would never be accepted.

Yes, highly Westernized here, but even the most authentic Chinese food in Canada is still not the same purely because ingredients are different. They don't even eat broccoli in China and all those veggies they use in Canada. Basically, they must use Canadian ingredients to make their food. Sure, there are some Chinese vegetables, spices, etc. available, but basically I'd say 90% of what they'd normally use is unavailable. Think about it, you can't even get fresh meat in Canada, but they kill the animal just before cooking it there, plus their animals are not all disgusting and sickly like the ones here. My wife is from China and says the Canadian animals are all sick... the first time they made chicken here they spat it out... they could tell that it was a sick animal. Plus, they also say the meat at the store is very old too. So, they raised their own chickens... that's how grossed-out they were by the meat here. It's all about freshness and quality in China. They are just like the Italians when it comes to food, but even more so. Food Is Your Medicine is what their whole culture is all about -- every dish is made in a way that has medicinal benefits. They don't sell hot dogs on the corner, they sell herbal tea for whatever is currently going around. Food at home is very different from in the restaurant. The stuff in the restaurant they never eat at home. You eat out to have stuff that would just be to laborious to make at home. They find it very odd that Canadians eat the same foods at restaurants that they eat at home -- what's the point of that? But, even in China they are losing their traditions and capitalism is moving in and forcing junk-food on them in a big way.

The Chinese food is Canada is adapted for the western pallet. It is westernized so people in canada will like it better. And the chinese food in china is authentic. Plus they have so many different herbs a fresh produce. Everything is from scratch.

Chinese food in China is not even Chinese food, it's just food. :P
Seriously though, Chinese food recipes as known in the west were mostly "cooked" up by western cooks. Plus the ingredients are limited only to what is indigenous in the country you're eating the food. Otherwise, Chinese food wouldn't be as cheap as it is now if the ingredients are authentic and imported from China.

most Chinese Chef in Canada came from Hong Kong so they provide the Cantonese style cooking. That's only one branch of the Chinese food, many other styles such as Shechuan, Hunan, Mandarin style is not popular in Canada, maybe that's why.
i tried a few Chinese restaurants in Canada and they are not bad at all, but all Cantonese style.

In China, the ingredients used are fresh and non chemical. Also different water. Makes a big difference in the way food taste.

Agree with everyone here that the aste in Canada is very much different in China. In china they use local herbs and some can't be found in Canada.

I am a former chef and live in Toronto and for alot of reasons and one the other fellow said about Hong Kong , it depends on the area your in, correct most places are geared to a westernized US style chop suey style menus, but in places like here in Toronto or larger city's like Vancouver Calgary even Edmonton (I worked there years ago and know) there are other styles.

The other areas like Hunan, Peking style or Manadarin not the restaurants, Szchwen and Haka or Mongolian area available you just have to search them out. Traditionally they are similar with the same sweet and sour, and other typically similar dishes as that is what commonly most people will eat. I go to places that serve more the kind of food found in mainland China, and eat alot of unusal things like tripe, cuttlefish, fishballs and bean curd (tofu) that are not common to most places.

My advice is if you ever have the opportunity to be in any of the larger city's, search out the China town area and see what your missing.

the same reason why Chinese food aka chaulafan is different in Ecuador. I think they just either do not have the same ingredients available or they change it up to meet the customer food tastes.
