A balance of proteins and starches, courses, and presentation and color. On top of flavors that work well together. Like if you're serving a dish that's mostly brown, you need that bright perk of color in a side dish, like a green salad. And if the main dish is heavy (like a rich carbonara or alfredo) then you want something light on the side.
