SAUERKRAUT & SAUSAGE BAKE
1 1/2 lb. bulk pork sausage
1 (28 oz.) can sauerkraut
1 tbsp. sliced onion
Mashed potatoes (enough for 4 servings)
4 tbsp. grated Parmesan cheese
In skillet, brown sausage; drain. Combine sauerkraut and onions. Place in bottom of 1 1/2 quart casserole. Cover with sausage. Prepare mashed potatoes stirring in half cheese. Spread potato mixture atop sausage. Sprinkle on remaining cheese. Bake at 400 degrees for 35 to 40 minutes.

Mashed potatoes goes great with sauerkraut but put the kraut to the side. Next-how do you prepare the kraut? The German ways is to wash the kraut out of the can with cold water, squeeze it dry. In a pot, roast some diced onion and bacon diced into small pieces. Add the sauerkraut and and cook with some broth. Add sugar or shredded apples or pinapple and pepper to taste. It should be sweetand sour, not make you pucker up.

I make this dish all the time in my family. We usually serve it with boiled red potatoes. I cook the potatoes in the kraut with the meat also so it has a great flavor. I have never tried it with turkey sausage but that sounds great! Hope it turns out well.

Traditionally this meal is served with boiled (peeled) potatoes.
Add to the sauerkraut a little cooking wine and some beef extract (cubes) when cooking. That should do for a hearty meal.

The place I'm from we would bake in the own sauerkraut with some bacon and a big peace of turkey(leg or smth). You should definitely bake it for an hour or so, and you can use some smoked meat instead of turkey.
Just add freshly baked bread and that's it, nothing else you need.

I got some in the frig now been there for months and i know if it has green stuff down there it aint no good anymore. Put it out for the birds to gnaw on.. or chunk it in the garbage.When sauerkraut doesnt smell sour anymore its time to get rid of it.

I like to make boiled potatoes - with butter and serve the whole dish with a nice brown mustard.

Perogies rock!!
You can make fried or mashed potatoes with it. Dumplings would be great with it too.
Sauerkraut and sausage is pretty universal. You can make just about anything to go with it.

You can boil or bake potatoes and cut them in quarters and put them in the sauerkraut.
