Where can i buy smelt roe (the small crunchy eggs that you find in california rolls sometimes it comes alone with rice and seaweed)? I know amazon sells it but I don't want to buy it online. Would walmart, farmfresh, food lion, or harris teeter have it? If i can find it do I have to prepare it in order to make sushi and how??
Thanks a lot!

You can usually find it at local Asian supermarkets.

No preparation is necessary, just spoon it right on to your sushi and enjoy! =]

I buy mine from an Oriental market by my house. Sushi is Japenese cuisine, so you may not find it in an Asian market. Oriental markets cover all. Find one that has fresh crab in tanks. They are sure to have it. If you don't know how to make sushi already, the best way to learn, is to go to You Tube. They have several videos that will walk you through. It's much better to actually watch it being done instead of reading how. If I knew how to upload the picture on here I would show you what I've done. I am really good at it now. I make the California rolls and the Spider rolls. They are fun and easy to make. I hope this helps.

How long ago did you buy it, it lasts a week or 10 days once opened, I used salmon caviar in alot of places it is not something that has a long shelf life, but if people took the time to open them right instead of plunging knife in the lid, but that is another story, when I worked in Japan we use flying fish or Tobiko, Uni, which is sea urchin roe, some salmon in the sushi bars, I use and have taste some of the most expensive black sturgeon caviar around, capelin roe is pretty fishy to begin with, we use them here in Canada for many applications, when I worked in Newfoundland they ate them fried whole like anchovies and sardines, if you want you can rinse them immerse them in water, then drain in a coffee filter in a small strainer, wash the container out to if you like.

I'd look at any Asian markets. I doubt walmart would have it.

If you're stuck without smelt roe, you may have to use toasted sesame seeds instead.

O.K., people. First of all its Tobiko, Flying fish eggs, not smelt.
Search on line for Bemka, House of Fine Foods & Caviar. They have a wonderfull selection of colors and flavors. Red, orange, black, green (wasabi flavored) in a number of pakage sises. They ship overnight, and its the same cost to ship to you if its 4 oz. of egss or 3 lbs. Stays good in your freezer for 6 months so get a few colors and enjoy! You need the red for dynamite sauce, orange for California rolls.
