Lumpia & pancit noodles can be easily made vegetarian by omitting the meat or replacing it w/ tofu.

Breads like pan de sal & ensaymada are delicious. The desserts like flan & Sans Rival cake are yummy.

There are certainly some Filipino dishes that could be vegetarianized- like make pancit noodles with veggies instead of meat, or make lumpia with a meat substitute.
