A Chinese restaurant is a restaurant that serves dishes that are based or found in China.

However, you don't have to be Chinese to cook in a Chinese restaurant. Many Latino cooks can be found is some Chinese restaurants, especially along the US-Mexico border.

Locally, some Chinese restaurants are owned by Vietnamese while the Chinese own Japanese restaurants.

To date, I don't believe there is any legislation, defining what makes a restaurant "Chinese".

I would consider a Chinese restaurant so if it served dishes authentic to China. I would think that it should also use the ingredients indigenous to China. Also keep in mind, China is a LARGE country with many different regions with cuisine all their own-Szechuan, Cantonese, Mongolian, Hunan, etc. In America most "Chinese" restaurants don't serve genuine Chinese, but Americanized Chinese food to please the "American palette".

The staff of the restaurant doesn't need to be exclusively Chinese to call the restaurant a Chinese. For example, I worked at a Japanese sushi restaurant, where the entire staff was Chinese, with exception to myself.

Thai, Vietnamese, and Japanese cuisine are all different from each other, and different from Chinese. Pan-Asian cuisine, encompasses the highlights of Asian food.

Hope this helps.

Literally it would mean food coming from any region in the country of China, however the contract they have with the mall may include any Asian cuisine.
