For Poland & Italy, I don't know, but for France all I can say is Good Luck !!!
A lot of people there still think vegetarians do eat fish, so try to explain what being a vegan means... Even with my (native,) fluent French, I find it difficult getting my 'bizarre' requests across to waiters/waitresses.

Try and look up on the internet for veggie cafes local to wherever you'll be staying, but whatever the country, I really think your best bet would be stocking up in health food shops whenever you can. (Try to take one of those little insulated cooler bags with you).

Enjoy your trip :-)

you are going to have some hard time trying to find vegan food in poland, as veganism is not very popular/socially accepted here, but try 'Green way' restaurants, there are a few in every big city, you can find out about it on this site: http://www.green-way.eu/nowosci.php they are not exactly vegan but they have a wide array of vegan options. you can also buy soy products in most supermarkets, although the choice is very poor.

Check out www.happycow.net and www.vegdining.com. You can find vegan and veg-friendly restaurants almost anywhere in the world.
