Enchiladas
olive oil
1 large green pepper
1 medium onion
3-4 servings worth of minute brown rice
1 can black beans, drained
9 flour tortillas, regular sized
1 packet low-sodium vegan taco seasoning
2 cans enchilada sauce
1/4 - 1/2 cups salsa
as much or as little grated vegan cheese as you want (Follow Your Heart soy cheese works great in this recipe)
Directions:
1) Slice pepper in lengthwise pieces, then in half (so they're about 2 inches long, 1/2 inch thick). Slice onion in rings, then in quarters.
2) Start preparing rice as indicated on the package. Preheat oven to 350 F.
3) While rice is cooking, heat 3-4 tablespoons of olive oil to medium high heat in a large skillet. Add peppers and onions, stirring occasionally.
4) When veggies start to brown, sprinkle about 1/4 of the taco seasoning on the veggies while continuing to toss.
5) Reduce heat to medium. Mix 1/4 of the taco seasoning with 1/4 cup of water. Add half of the water mixture to the veggies and let simmer for about 3-5 minutes.
6) Drain beans and stir in with rice (once the rice is done cooking).
7) Add rice and bean mixture to the veggies, sprinkle 1/4 of the taco seasoning to the mixture and toss. Pour in the rest of the water mixture and the salsa. Stir well until all is heated through and well combined; about 2 minutes. You can add more taco seasoning to this if you'd like.
Remove skillet from heat.
7) Grease 9x12 baking dish (or whatever you have).
Now the fun part! Lay out a tortilla and fill with the rice, bean, and veggie mixture. Don't fill too much. Roll the tortilla up. The diameter of the roll should be about 1.5-2 inches. Place the roll in the dish width wide with the edges down (so that it stays rolled). Repeat with the rest of the tortillas. (I was able to fit 6 rolls in my pan and I made another batch with the left over filling. You can use a larger dish if you have one to fit all of the tortilla rolls in at one time).
9) Pour enchilada sauce over the top of the enchilada rolls. I used about 1.5 cans. Spread it around evenly, covering the entire tops of the tortillas. Sprinkle with shredded vegan cheese.
10) Put pan in the oven for 20 minutes or until the cheese if melted and delicious looking.
11) Enjoy!

Bean & pasta casserole recipe for a lot!
Sautee 1/2 diced onion for a few minutes
add sliced zuchinni
(really any veggies you want!)
Cook 8-16 oz pasta
drain, pour into 11x9 baking pan for baking
(or large bowl if serving cold)
Add 1 can favorite beans (or more beans to taste) -i like kidney beans
Add tomato sauce to taste 1/2 to 1 jar
Add sauteed veggies
stir !
-If you eat cheese you could top it w/ cheese
or if vegan top with nutritional yeast, garlic salt, or garlic powder and salt
-(optional) bake at 350 for about 20 min.
Serve cold as a pasta salad type dish or serve it hot like a casserole.

Take some beans (black beans or red kidney beans) some left over rice and fry it up! Add spices or soy sauce if you want.
Heat up fava beans and a diced tomato for about 10-14 min. Add some spices like turmeric, curry etc. and serve on pita bread.

Vegetarian chilli. Throw different beans, tomato sauce and veggies in a pot and cook them with chilli powder, garlic,salt and pepper. Add vegetarian type meat if you like. So delish.

Hummus is one of my favorites. The simplest & best tasting recipe I've found so far is 1 can chick peas, 1/4 cup olive oil, 1 tbsp lemon juice, & 1 tsp cumin; you just mix all those together in a food processor & serve w/pita bread. This is such a versatile recipe, though, there's an infinite number of variations you can make.

Mix a can of black beans with chopped onion (preferably red), crumbled feta cheese, lemon juice, salt and pepper to taste and, if you like, olive oil. Let it marinate a couple of hours and enjoy!
This can be a side dish, a salad-type main dish (you can even serve it on a bed of lettuce with good bread on the side) or a buffet contribution.

No! Don't do it! "Delish" is an evil neologism.
How about baked beans without pork? It tastes about 100 times worse than regular canned pork and beans, if my old school's vegitarian beans were anything to compare it too, but vegitarians can't taste very well anyway.
