Pate on toast, caviar on biscuits, tiny savoury tartlets.
mini pizzas, cheese and pineapple on cocktail sticks, small open sandwiches, prawn cocktail vol au vents, devilled eggs.

This is really easy. 1 pkg of Velveeta cheese, 1 pkg Jimmy Dean sausage (spicy) and one pkg of rye or pumpernickel cocktail toast.

Brown the sausage in a frying pan, melt the cheese in with it. Spoon the cheesy sausage mixture on to the cocktail toast and then broil it for 2-3 minutes (or until the cheesey sausage turns a light brown). This makes it crunchy and keeps the cheesy sausage from rolling off the cocktail toast. It is very good.

You don't say what 'kind' of party this is for... that would have some bearing. But just general suggestions - stuffed mushroom caps, tasty little sausage bites, (recipe attached), Chicken salad in phyllo cups or on mini croissants, Peanut butter and bacon on toast points (mix really crispy bacon into creamy peanut butter and spread on toast points), Hot spinach-artichoke dip with crackers and pita bread wedges, cheese fondue with chunks of crisp french bread or even on the sweeter side... maybe a chocolate or caramel fondue with chunks of pound cake. All pretty heavy duty and high calorie and guaranteed to fill 'em up.

Sausage Bites

1/2 pound of sausage roll (I stick to Bob Evans)
1/3 cup shredded mozzarella cheese (I use a combination of mozzarella and cheddar)
1/4 cup sour cream
3 tablespoons mayonnaise
2 tablespoons chopped green onion
1/2 teaspoon Worcestershire sauce
10 slices white bread**

**Party rye or thinly sliced French bread can be used instead of white bread. Double the recipe to have enough sausage mixture for a full loaf of a baguette.

Preheat broiler. Crumble and cook sausage in medium skillet until browned. Drain on paper towels. Transfer sausage to small bowl; stir in cheese, sour cream, mayonnaise, green onion and Worcestershire sauce. Cut crusts from bread. Cut each slice into 4 squares; spread about 1 teaspoon sausage mixture onto each square. Arrange squares on ungreased baking sheet; place under hot broiler just until cheese melts and topping bubbles (Be careful not to burn corners and edges.) Serve hot.

Take mini cocktail weiners and wrap bacon around them, secure with tookpick. Place on cookie sheet. Mix any BBQ sauce with some brown sugar to taste, pour on weiners and bake them in a 350 degree oven for 20 to 25 minutes.

I like doing an artichoke or spinach dip, baked in a bread bowl - serve it alongside some crusty bread slices. Also, stuffed mushrooms - stuffed with sausage, crab or cream cheese filling is nice. Bacon-wrapped sea scallops are always a big hit, too. A big dish of min-meatballs - you can do sweet and sour or Italian ones.

Armadillo Eggs

12 Jalapeno peppers, seeded and washed.
Pack Philadelphia cream cheese.
Apple wood smoked bacon

With a piping bag, fill the jalapenos with cream cheese, wrap with bacon pieces and secure where needed with tooth pics. Bake 350 until bacon begins to crisp. Let cool, remove tooth pics, serve.

Sweet & Sour Kielbasa: Cut up (5 pkgs) kielbasa and add ie 2 cups Grape jelly & 1 cup BBQ sauce. Simmer in crock pot or slow cooker

Pepperoni Bread: Thaw bread dough, roll into rectangle, sprinkle with olive oil and italian pizza seasoning. Add pepperoni & cheese. Roll up like a jelly roll. Bake 350 for 45 minutes. You can also use other meat.... ham&cheese, etc.

Ham rolls. Get lunchmeat ham sliced thick spread with cream cheese and roll lenthwise with a green onion in the middle. Chill for an hour and cut into little rolls. I think 1 roll makes about 10 little ones. they're delicious.

Shrimp Cheesecake New Orleans
Crust:

4 oz. grated parmesan cheese
1 C. italian seasoned bread crumbs
1/2 C. French bread crumbs
1/2 C. pecans, plus additional for garnish, if desired
1/2 t. Creole seasoning
1/2 C. butter, melted

Filling:

1 T. olive oil
1 C. onion, chopped
1/4 C. celery, chopped
1/4 C. green bell pepper, chopped
1/2 C. roasted red peppers, chopped
1/4 green onions, chopped
16 oz. cream cheese
12 oz. smoked Gouda cheese, grated
8 oz. goat cheese
4 oz. fresh Parmesan cheese, grated
1/2 C. heavy cream
4 eggs, beaten
1 lb. shrimp roughly chopped
1/4 lb. Andouille sausage diced finely

Crust:

Combine cheese, bread crumbs, pecans, and seasoning in food processor and pulse until mixture is finely ground.

Remove and add butter until moist.

Press into bottom of springform pan and bake at 325°F. for 15 minutes or until brown.

Filling:

Preheat oven to 325°F. In a baking pan large enough to accommodate your springform pan, add an inch or so of water to make a water bath.

In skillet, sauté vegetables in olive oil until tender and set aside to cool.

In mixer, beat cream cheese, Gouda, goat cheese, and Parmesan until smooth. Add heavy cream and eggs.

Gently fold seafood, Andouille and vegetables into cheese mixture.

Pour mixture into crust. Cut a piece of foil large enough to go around pan and wrap pan so no water can leak into it. Place cheesecake pan into a water bath in a baking pan. Bake for 1 1/2 hours or until set.
