So its my mothers birthday and I am preparing a formal dinner for her and the close family but i need help figuring out a menu. there are several options and any suggestions would really help:
Here are my two options:
#1:
Spinach w/ gorgonzola salad
tuna plate
blue cheese, bacon and chive stuffed pork chops
vegetables in spicy sour cream
bananas in coconut milk
coconut cake
#2:
strawberry spinach salad
toasted romano crostini
spricy shrimp in coconut sauce
zucchini with onions
peanut butter and chocolate mousse
chocolate coconut cake

What sounds better? or what can i do to make it better? suggestions would help out alot but keep in mind healthy and low carb foods please

You second choice sounds perfect. A nice mix of sweet and spice. The first is pretty heavily ladened with cheeses and spices. It would be better to lighten one of the dishes if you were to choose that. On the second recipe I would offer only the Chocolate Mousse for it's lightness since you are serving a shrimp with a coconut sauce. I would not serve the coconut cake...too redundant.

The first menu has too much rich stuff to me: cheese in the chops and sour cream in the veggies.
I really like the second menu. But I'd rather have coconut cake with lemon curd than chocolate coconut and no mousse.

I like your last option. Since it's such a heavy meal, why not just make a chocolate mousse. It's light and would just hit the spot without making their tummies ache.

Both menus are great, but # 1 will blow them away !! It's OK to splurge on special occasions :)
