I am a former chef and love Middle Eastern food, whether it be from Egypt or any of the north African countries, or the Arabic ones.
My 3 favorite dishes are Tabouleh, the cracked wheat salad, I always have shawarma when in the Kensington Market in Toronto Canada, there is an Egyptian dish called Kashoory, a melange of rice, pasta, lentils in a spicy tomato sauce topped with a hot pepper vinegar, very popular in Cairo.
And who can forget hummus, I love it but do try to limit the fat in it by cooking my own chickpeas and using the broth and a small amount of oil.
The one fellow was a bit east of the area in India, it is not termed or considered as Middle Eastern, and I will take any of the desserts what ever they may be, I love the flavour of nuts and rosewater.

I like Fesenjon and kashke bademjon. The first one is a rich dish made of walnuts and pomegrante. The other one is eggplant, yogurt and rice.

It doesn't have a name, I believe, but this is how it's done:
Boil fava beans
Boil millet
Put both in a pot
Add salt, pepper, white wine, tahini sauce, and olive oil
Stir
Done. It consists of middle eastern ingredients, and I could eat it every day. I am, in fact, eating it right now, there's a steaming bowl of it standing right here, next to me.

hoummos,tabouleh.and capsa,which is a gulf dish,of chicken,or lamb with highly spiced,and fragrant saffron rice,covered in fried almonds with an aromatic tomato and onion sauce(there are different versions of this dish) this is my favourite has to be tasted to be believed

Falafel and fool. Don't laugh, but it is true. Tabouleh is another favourite of mine as is Creamed Chicken soup.
And my favourite sweet is knafeh (kunafah) which is honeyed goat cheese covered with "shredded wheat dough".
