Here are my suggestions. I tried to keep in mind the criteria as I planned.
The meals are:
Friday:Late evening "cracker barrel" snack
-1 large bottle Popcorn (bring oil/seasoning to cook on stove)
-4 large bags of pretzels
-3 bags peanuts in the shell (salted roasted)
-2 large bags of trail mix
-Beverages: Juice boxes & water
Saturday:
Breakfast: Pancakes (Use a commercially prepared mix) with blueberry topping (dried blueberries reconstitued with water and sugar), Bacon or sausage links, orange juice boxes.
Lunch: Hot dogs or peanut butter & jelly sandwiches, chips, a beverage & a cookie
Dinner: Here's your biggest meal of the trip (a protein surge):Canned baked beans (Bushes is best), smoked kielbasa sausage(pre-cooked, dinner rolls & beverage. Cut up the sausage into small pcs. and add to the beans while heating them in a pot.
Late evening "cracker barrel" snack:
-Hot chocolate packets
-Pepperidge Farm Goldfish Crackers
-Beef jerky
Sunday
Breakfast: Breakfast burritos: Large flour tortillas, scrambled eggs, shredded cheese, diced ham (salsa optional).
Hope this helps

Hello Indiana:
Prior to preparing any food, you should consult with each family to see if there are any food allergies that need to be considered. Peanuts & peanut oil is one of the deadliest. Soy is rarer, milk products are also allergens. If you do have someone with an allergy, their food must be prepared separately, and be extremely careful of cross-contamination.
Take plenty of prepared trail mixes and other snacks such as fresh fruit, crackers, loafs of bread, PB&J, and cheese.
Have fun!
Keep on Scoutin'

You could make these in advance, using canned fish to keep costs down and use a variety. eg, sardines, mackaral, herrings, tuna or what ever is on special, and in different flavours. Fish Cakes. 2C. Cooked fish. (flaked) 1C. Potatoes. (mashed) 1. Egg. (whisked) 1/8. Pepper. 1. Onion. (diced) Combine and mash all ingredients together in a mixing bowl. Salt to taste. Shape into cakes and fry slowly in small amount of hot fat or on the grill. Good served with tomato or cheese sauce.

I hope these ideas help
CAMP APPLE DESSERT
1 apple, sliced, cored, keep skins on
2 tbsp. coconut
2 to 3 dates, chopped
2 tbsp. chopped walnuts
2 tbsp. brown sugar
2 tbsp. butter
A few mini marshmallows
Combine all in foil packages, set around coals of camp fire and cook 30 to 40 minutes turning every so often, let cool 15 minutes before eating.
CAMP FIRE BACON & EGGS
1 stick or roasting fork
1 paper sack
1 strip of bacon
1 egg
Place piece of bacon in bottom of small paper lunch sack. Extend over coals of camp fire or charcoal fire using stick or roasting fork. Be careful not to let bottom of sack touch the coals. As bacon cooks the bottom of the sack will be coated with bacon grease. When bacon is almost cooked, break egg into sack. Continue holding sack over coals. When egg is cooked, peel back top of sack and eat out of the bag.
AMERICAN FRIED POTATOES FOR CAMPING
6 uncooked med. potatoes
1/2 c. thinly sliced onions
1/4 c. oil
1 tsp. salt
1/8 tsp. pepper
Prepare 20 charcoal briquettes until they are white hot.
Slice or cube potatoes. Add onions. Heat oil in skillet. Add potatoes and onions and fry over medium heat until golden brown. Turn potatoes and onions frequently until they are well browned. Season with salt and pepper. Makes 4 servings.
